To go with our grilled pork chops, we made this gourmet mango salsa to pour on top:
1 ripe mango, diced (approximately 1 1/2 cups)
1/4 cup finely chopped red onion
2 tablespoons lime juice
2 tablespoons rice vinegar
1 tablespoon chopped fresh cilantro
Instructions:
Combine all ingredients in a medium bowl. Let stand for 15 minutes; stir before serving; enjoy.
